If you haven’t taken note, pumpkin spice which these days is in everything from lip balm, peanut butter and Febreze air freshener, is getting some competition from the sweet, amber substance probably best known for flavoring pancake syrup.
You can bet that restaurants and food makers want to see pumpkin spice’s popularity replicated. Sales of pumpkin-flavored foods reached a record $414 million in sales in the year ending July 1, the consumer data company Nielsen found.
Maple could be on its way. According to Google Trends, maple-related searches have skyrocketed since Sept. 3.

From yogurts with notes of rosewater and hibiscus to savory cardamom-spiced pots, the yogurt landscape is way sexier outside the U.S., so trend scout Koel Thomae is always on the move. After co-founding and later selling her own yogurt brand, noosa, she stayed on with the company doing innovation research. The business of scouting yogurt flavors has taken her across the globe to find inspiration, especially in “high dairy consumption locales” like Denmark and France, where people eat way more yogurt per capita. “In France, people might have it for lunch, as a snack, or as a sweet treat,” Thomae says. “In the United States, yogurt is mostly a breakfast item, although that’s slowly changing.”

Brands like Siggi’s, an Icelandic yogurt, and noosa, which has with Australian roots, are growing. Siggi Hilmarsson, founder of Siggi’s, and Koel Thomae, co-founder of noosa, both say Greek yogurt made shoppers more open minded and willing to try new products.
“I absolutely think Greek yogurt really invigorated the category from both a retailer and consumer perspective,” Thomae said.

aussie yum! love artisinal gelato? this yogurt equivalent: not low-fat or low-sugar, but fresh and delicious and worth every calorie when motherhood has you craving a treat. koel thomae, a colorado mom by way of australia, found the family recipe in her home country and brought it to america. noosa is from whole milk, sweetened with a bit of wildflower honey and fresh fruit purees and made in small batches on a family dairy farm north of denver. new noosa yoghurt mates even have mix-ins like Guittard chocolate.

noosa is releasing a Colorado-exclusive Palisade peach flavor that will be in the market for only a limited time. The company said it sources the peaches through a co-op of farmers on Colorado’s Western Slope.
They are also piloting a new build-your-own yogurt bar at the King Soopers in Broomfield where customers get to pick their flavor and topping. The company hopes to bring the yogurt bar to other stores.

in the seven years that noosa yogurt has been on the market, it has gained quite a loyal following. the latest innovation from the colorado-based company goes a little more mainstream …last month noosa announced it was going to release a new line of yogurt called “mates,” which basically combines their yogurt with a small packet of mix-ins.

noosa yoghurt celebrated “mates”, its new mix-in line, with a launch event on july 12 at 447 broadway in new york. the event, which was designed by m booth, featured a d.i.y. yogurt bar that invited attendees to make their own creations. the event offered cocktails and “mocktails” inspired by the new flavors, including maple ginger, coconut almond chocolate, honey cranberry almond, and banana chocolate peanut. the event also invited attendees to write their own noosa love letters at a station that included a branded pink and white mailbox and a chrome typewriter. talent from the haiku guys and gals was onsite to help write the letters.

noosa co-founder rob graves, who learned to milk cows on the property at age six, walked media from around the country through the state-of-the-art yogurt producer. like brewery tours of the area, the noosa tour had samples including a flight of whole, chocolate and root beer milks.
the production process is mostly automated and takes about 18 hours to complete a batch. machines can fill 280 cups a minute. the site features a treatment plant that re-uses the same water for three purposes — making yogurt, cow drinking water and irrigation for crops. there’s a 10 a.m. quality testing every day of the year.
